Rainbow Jello – Light, Delicious and Good For You (Your Nails at Least!)

What sweet dessert is delicious but light? You immediately think of Jello right? Of course! My daughter made this wonderful dessert for the family.

Rainbow Jello

There are so many different recipe variations for Rainbow Jello on the internet and while they are all fairly similar, we want to share the one piece that we feel must not be changed.

What you need:

3 oz packages of each: Strawberry, Lime, Orange and Lemon JELL-O

6 Envelopes of Knox unflavored gelatin (each box has 4 envelopes, so you will need to purchase 2 boxes)

1 can of sweetened condensed milk*

*Now this is the one part that I think cannot be substituted. The sweetened condensed milk must be EAGLE BRAND. Any other brand of condensed milk just doesn’t taste the same.

Directions:

Microwave 1 cup of hot water and mix with 2 packets of Knox gelatin. Mix well until dissolved.

Combine 1 cup of sweetened condensed milk with 1 cup of hot water. Mix well. Combine the gelatin mix with the milk mixture. Mix well and set aside.

Prepare a 9 X 13 glass pan. Grease your pan. (We used mayonnaise and it works great.)

Prepare your first flavor. You can use any flavor and in any order. This recipe makes only enough milk mixture for four flavors, but you could definitely make more and have more layers.

This part of the recipe is a little time consuming. The hardest part is waiting long enough for the jello to firm up before attempting to eat it!

Combine the first JELL-O flavor with 1 packet of Knox gelatin and 1-1/2 cup of hot water.  Mix well until well dissolved.

Pour into the prepared pan. Put the pan in the refrigerator to allow the first layer set for 20 minutes. Test the Jello to see if it is firm. (Tilt the pan gently – if its firm enough it should stay put in the pan.)

After the initial JELL-O layer is set, measure one (1) cup of the milk mixture (mix this mixture every so often to ensure that it doesn’t set before it makes it to the pan) and pour it on to the first layer of JELL-O. Put it back into the refrigerator for another 15-20 minutes so that layer can set.

Continue this pattern until you have completed all four layers of JELL-O. There should be enough milk mixture for the three layers. The very top layer should be a Jello layer. The layers should be as follows:

JELLO – milk – JELLO – milk – JELLO – milk – JELLO

Once set, this makes a wonderful treat that can be cut into squares. Light and delicious!

There is a perk to this delicious dessert. Gelatin works wonders for your nails and hair. Every time I enjoy this treat, I notice my nails growing and feeling stronger.
